Protein Muffins…

Trying to get creative with protein muffins, to have one pre/post workout or as an afternoon snack…   I made some last night with low fat cottage cheese, oats, egg whites, one full egg, cocoa powder, slivered almonds, a dash of milk and bluberries on top!  The nutritional breakdown looks like this:

calories – 129, fat 5g, protein 12g, carbs 7.5g, calcium 53mg! They taste like mini cheesecakes… with a nice crunch to them from the almonds and then the juicyness of the blueberries!   The fat is from the cottage cheese, almonds and egg yolk.  Protein is in so many of the ingredients (oats, cocoa powder, milk, eggs, cottage cheese)!
